Here’s a vegan alternative to fried Filipino spring rolls/Lumpiang Shanghai. This is a great dish to make your kids eat more vegetables, or for vegans who want to try Lumpiang Shanghai. My aunt, or as I call her, “Mommy Henya”, created this recipe for her kids and grandkids who hate eating vegetables. She said they loved and couldn’t get enough of her vegetable Lumpiang Shanghai! The recipe yields to 50 pieces. If not using all at once, store wrapped lumpia in the freezer for later enjoyment. Kain na, let’s eat!
