This keto vegetable pancakes is a completely vegetarian recipe. No egg no meat, and loads of vegetables. I think it is lovely because I prefer these vegetable pancakes to eating a salad in the winter. It is loaded with vegetables, warm and extremely satisfying. Add anything but the kitchen sink and you have a vitamin loaded dish. Pair it with eggs , meat, paneer or tofu and you are good to go. Try it out and let me know in the comments section.
