Kid Friendly Vegan Recipe || Lentil-Roni



1 medium onion
1 green pepper (or a zucchini, you could use both if you like)
3 cups spinach (if desired)
4 cloves garlic
2 – 28oz cans of crushed tomatoes
1 8oz can of tomato sauce
2 teaspoons oregano
1 teaspoon Italian Seasoning
2-3 teaspoons sugar
1 teaspoon salt
pepper
1/2 cup soaked cashews overnight (or at least 2 hours), blended with veggie broth or water until creamy. Careful not to add too much liquid.
1 pound of Fusilli
1 1/2 cups cooked lentils
Vegan mozzarella if desired

Allow the sauce to reduce for 30 minutes or so, until desired thickness
Bake at 350 for 30-45 minutes, don’t overcook
