4 medium tomatoes, quartered
1 red onion, cut into 8 wedges
3 sweet potatoes, peeled and sliced
2 zucchini or courgette, sliced
1 red bell pepper, seeded and cubed
18oz (500g) ricotta cheese
1 tbsp olive oil
3 tbsp freshly chopped basil
1/2 cup heavy cream
1 egg, beaten
8 sheets fresh lasagne
