Here’s a quick high protein vegetarian meal that’s pretty easy to do. Once you throw all the ingredients in the pan you just leave it for a good 20 minutes and stir it up.
100g red lentil
100g white potato (thinly sliced)
1/4 garlic granules
1/2 medium red onion
1/2 tbs finely chopped parsley to serve
1) On a medium heat,Fry onions, garlic and turmeric just before browning
2) add potatoes, lentils and spinach and give a quick stir before covering to boil. Add boiling water to cover the mix plus another 1.5cm over.
3) leave to cook for about 20 minutes, stirring occasionally
4) add more water for preferred consistency and serve…
